Adele takes her name from Adele Blanc-Sec, the unflappable heroine of a Paris comic strip. It is Clairette, almost entirely, with a little Marsanne, from warm granite slopes above the Ouveze at Saint-Julien-en-Saint-Alban. Whole bunches go through the press, the juice settles on its own in the cold, and the wine ferments on wild yeasts in concrete before sitting on its lees for six to eight months. Nothing added until the barest touch of sulphur at bottling. Clairette can be plain; here it is anything but - fine-boned, layered, faintly saline, with a quiet persistence that rewards a second glass.
